These are yummy and great for kids!
2 cups freshly squeezed lemon juice
1 cup water
1-2 tbsp raw honey (or more to taste)
Pour lemon juice and water in a pan on the stove over medium heat. As it begins to warm, sprinkle the gelatin over the surface. After a few minutes, whisk to combine and once gelatin is desolved, remove from heat. Add honey (allow to cool slightly before dissolving the honey if the juice/water got hot) and pour into a shallow dish or 8×10 pan. Allow to set in the fridge for at least 2 hours. Cut to serve or use cookie cutters to make fun shapes.
